ORIGIN OF THE GRAPES: Selected vineyards in the province of Benevento.
GRAPE VARIETIES: 100% Aglianico.
TYPE: Red wine with Denomination of Controlled Origin.
VINIFICATION: Maceration and fermentation at controlled temperature for a minimum of 12 days, soft pressing.
MATURATION AND AGING: In stainless steel tanks for 2 months, in oak barrels from 10 to 30Hl for 8 months, bottle aging for 3 months.
ALCOHOL CONTENT: 13.2° vol.
COLOUR: more or less intense ruby, tending towards garnet over time.
BOUQUET: Scents of red berried fruits which particularly recall cherries and plums.
TASTE: Full and soft taste.
GASTRONOMIC COMBINATION: With red meats, game and spit-roasted game, aged cheeses. SERVICE TEMPERATURE Serve it at a temperature of 16°/ 18°C.

The grapes destined to produce this red D.O.C. of undisputed finesse, they come from the same Vitis Hellenica (Aglianico) of the Greeks, in the variety coming from a limited area of Sannio with dry and well exposed soils. About Borgo San Michele
Borgo San Michele company produces its wines in Montefusco (Av) on the green hills among the two districts of the Campania region, Irpinia and Sannio, in an area with fertile soil, volcanic in nature and with an excellent sun exposure. The precious vineyards enhance this territory and all descend from ancient Hellenic and Latin vines. The careful study of these native varieties and their particular grapes has been the primary objective of the company, aware that the cultivation of the vine is a complex art that requires technical competence, passion and dedication, constantly supporting the winemakers in all phases of production, from the demanding research in the laboratory to the budding up to the festive harvest days.
