TYPE: White wine with Denomination of Controlled and Guaranteed Origin.
VINIFICATION: Cold maceration, soft pressing, controlled temperature fermentation.
MATURATION AND AGING: In stainless steel tanks for 2 months, bottle aging for 1 month.
ALCOHOL CONTENT: 11.5° vol.
COLOUR: Light straw yellow.
BOUQUET: Floral scent and notes of white pear and citrus hints of grapefruit.
TASTE: The taste is fresh, quite soft, with a mineral finish.
GASTRONOMIC COMBINATION: Excellent aperitif, it is chosen as a companion to the most refined dishes of Mediterranean cuisine based on fish, seafood and white meats.
SERVING TEMPERATURE: Serve it at a temperature of 8°/ 10°C.

It was the Greeks who brought the original Fiano vine, the “Vitis Apicia”, to Italy: the first vines were planted in Lapio, a locality that took its name from the grape, the municipality where Fiano is still produced. In turn, the name “Vitis Apicia” or “Apina” derives from the characteristic, precisely of this sweet-scented grape, of attracting swarms of bees to the vineyards. From Apina came “Apiana” and from this “Afiana”, therefore Fiano.

About Borgo San Michele
Borgo San Michele company produces its wines in Montefusco (Av) on the green hills among the two districts of the Campania region, Irpinia and Sannio, in an area with fertile soil, volcanic in nature and with an excellent sun exposure. The precious vineyards enhance this territory and all descend from ancient Hellenic and Latin vines. The careful study of these native varieties and their particular grapes has been the primary objective of the company, aware that the cultivation of the vine is a complex art that requires technical competence, passion and dedication, constantly supporting the winemakers in all phases of production, from the demanding research in the laboratory to the budding up to the festive harvest days.
